Oh. My. Goodness

Go get some blueberries...fast! And while you are at it get some zucchini! And make this!


I made it and Anna Claire ate it. Thankfully she shared with her mother.


Blueberry Zucchini Bread

3 eggs, lightly beaten
1 cup vegetable oil (I used canola)
3 teaspoons vanilla extract
2 1/4 cup white sugar
2 cups shredded zucchini
3 cups flour
1 tsp. salt
1 tsp. baking powder
1/4 teaspoon baking soda
1 T. ground cinnamon
1 pint fresh blueberries (I added more!)
1 T. white sugar
1 T. brown sugar.

Preheat oven to 350 degrees. Lightly grease 2 loaf pans
In a large bowl, beat eggs, oil, vanilla and sugar together. Fold in the zucchini. Beat in the flour, salt, baking powder, baking soda and cinnamon. Gently fold in the blueberries. Transfer to loaf pans. Mix 1 T. white sugar and 1 T. brown sugar together and sprinkle on top of batter.
Bake approx. 1 hr. and then check for doneness (mine took about 1 hr. 10 minutes, but I think it depends on the loaf pan). It's done when a knife inserted comes out clean. Cool 20 minutes in pans, then turn out onto racks to cool completely.

Sarah, I am so glad to call you my daughter-in-law. I love how you lovingly care for my son and grand-daughter. So, this is one mother-in-law who will definitely try her d-i-l's recipe.

I made half the recipe. It was delicious. Rick says he thinks it's better than Banana Nut Bread. Think next time I'll put some nuts in it. Loved it. Thank you for the recipe.
